English: Tofu skin also known as dried beancurd or yuba is a Chinese and Japanese food product made from soybeans. During the boiling of soy milk, in an open shallow pan, a film or skin composed primarily of a soy protein-lipid complex forms on the liquid surface. The films are collected and dried into yellowish sheets known as tofu skin or soy milk skin.
日本語: ゆば湯葉湯波油皮)は、豆乳を加熱し、液面にできた膜(ラムスデン現象)を竹串などを使って引き上げた大豆の加工食品の一つ。精進料理の材料の一つとして、中国から日本に伝わった。
