Description
Español: Los bautizos son grandes ocasiones en cualquier familia. La comunidad zapoteca de Santa Catarina Quiané, Oaxaca, no es la excepción, por lo que contrataron a la cocinera tradicional Doña Mari, referente local en la preparación de moles. En esta ocasión particular cocinó mole estofado debido a que los padres preferían el sabor de éste al más tradicional mole negro.
English: Baptisms are a great happening in any family. The Zapotec community of Santa Catarina Quiané, Oaxaca, is no exception. Consequently, they hired traditional cook Doña Mari, a local authority in mole sauces. On this particular celebration she cooked an estofado mole because the parents of the baptized child prefered it over the more traditional mole negro (black mole.)
