東日本では冷やし中華・冷し中華（ひやしちゅうか）、西日本では冷麺と呼ばれるものは、キュウリ等の野菜やハム、錦糸卵などの具材を細切りにして、茹で上げた後冷やした中華麺の上に並べ、酸味等のあるタレをかけた日本の夏における代表的な麺料理の一つである。日本各地に様々な呼称が存在する。東日本で冷麺といえば韓国の麺料理を指す。
