Description
Deutsch: Der Karpfen wird im Plothener Teichgebiet und im Schleizer Oberland besonders zubereitet. Der portionierte und gewaschene Karpfen wird in einem kräftig gewürzten Wurzelgemüsesud gegart. Der Sud wird mit einer Einbrenne oder Soßenkuchen zur Soße weiterverarbeitet und mit brauner Butter verfeinert. Die Besonderheit ist, dass als Beilage zum Karpfen Thüringer Klöße serviert werden. Fotografiert im Gasthaus Zum Plothenteich in Plothen.
English: The carp is prepared in a special way in the Plothen pond area and in the Schleizer Oberland. The portioned and washed carp is cooked in a strongly spiced root vegetable broth. The broth is further processed into a sauce with a roux or gravy cake and refined with brown butter. The special feature is that Thuringian dumplings are served as a side dish with the carp.
