The upper section of a winery was formed of two sections where the grapes were tread underfoot and so crushed. The grape juice flowing down through a small hole was collected from there and brought inside jars for fermentation. When the fermentations process was completed the grape juice was stored in wine jars to be used daily. A government site (and other sources) place the winery in the "first valley".
