| Description | Chapel’s Country Creamery owner Holly Foster in Easton, MD adds vegetable rennet to 1150 pounds of milk to produce the milk curd used to produce the dairy’s “Bay Blue” cheese. The rennet is added to heated milk and let to set, until it reaches a custard like consistency. The time varies from 30 minutes to 2 hours. The dairy uses fresh raw milk 12-24 hours old. The milk is all-natural and contains no synthetic hormones, antibiotics, or chemical compounds. USDA Photo by Bob Nichols. |
