English: The base of the recipe is Spanish and perhaps French, but during the Viceroyalty in Mexico this dairy dessert spread throughout Mexico, little by little it became the base of cakes, cookies and all kinds of viceregal pastries and Mexican sweets too, almost it is always used as filler. In the image it was used as a filler and main actor of a pie.
Español: La base de la receta es española y quizá francesa, pero durante el Virreynato en México este postre lácteo se extendió por todo México, poco a poco se convirtió en base de pasteles, galletas y todo tipo de repostería virreinal y en dulces mexicanos también, casi siempre es usado como relleno. En la imagen se usó como relleno y actor principal de un pay.
