rate oven to a strawcolor. Cover with fondant or con-fectioners frosting. Garnish with threecrosswise rows of chopped pistachio nuts,or almonds chopped and browned. Pineapple Parfait Chop fine enough slices from a can ofpineapple to fill a cup; with a woodenpestle press this through a gravy strainer(not a sieve); if the pineapple be tenderand fine-chopped, the whole of it will passthrough the sieve; add one-fourth a cupof the pineapple syrup, the juice of halfa lemon and three-fourths a cup ofsugar and stir until the sugar is dis-solved; beat one cup and one-third ofcream until quite firm throughout; overthis pour the pineapple mixture andfold the two together thoroughly. Pourinto a quart mold; pack in equalmeasures of rock salt and crushed ice;let stand about three hours. Tujn themold upside down and repack in ice andsalt, after about one hour and a half.When unmolded, garnish with halfslices of pineapple, whipped cream, andeither chopped pistachio nuts or crushedcandied rose petals.
