| Description |
English: Capuns is a package of spaetzle dough wrapped with chard, lettuce or spinach leaves. The traditional dish from the canton of Graubünden is enriched with finely chopped salsiz, Graubünden meat or bacon. Capuns are cooked in milk water and baked with mountain cheese depending on the recipe. A sauce from the milk water (half bouillon and milk) is served with it. Photographed at the Hotel Schweizerhof in Lenzerheide.
Deutsch: Capuns ist ein Päckchen aus Spätzleteig, daas mit Mangold-, Lattich- oder Spinatblättern umwickelt wird. Das traditionelle Gericht aus dem Kanton Graubünden wird mit klein geschnittenem Salsiz, Bündnerfleisch oder Speck angereichert. Capuns werden in Milchwasser gekocht und je nach Rezept noch mit Bergkäse überbacken. Dazu wird eine Sauce aus dem Milchwasser (halb Bouillon und Milch) gereicht.
