Description
Español: El cochayuyo, cachiyuyo, cochaguasca, cochahuasca,1 o coyofe (Durvillaea antarctica), es un alga de color café comestible rica en yodo que habita en la costa de los mares subantárticos, en Chile, Nueva Zelanda y el océano Atlántico Sur. Para preparar la ensalada primero hay que cocinar el cochayuyo pero no sin dejarlo remojando toda la noche en una fuente con una tapa bien pesada porque suele tomar turgencia y salirse de donde reposa. Una vez cocido y frío se corta en cuadritos, se agrega cebolla picada bien fina y cilantro, en este caso también agregué sésamo tostado. El sabor de este platillo es parecido al pebre con un toque marino.
