English: Gadbud is an Ice-cream variant which is found across coastal Karnataka. Gadbud was the name given by a vendor of Diana Restaurant in Udupi district when few college students had visited the restaurant for having ice-cream. The students had visited the restaurant at late night when it was about to close and the owner had to think of something to serve the students. So, he took a large tall glass and some ice-cream flavours and some fruits which were cut into smaller pieces and some dry fruits. Then he put a scoop of ice-cream and layered them with other ice-cream flavours and fruits were sandwiched between them. The students liked the new ice-cream variant and when asked about the name, the owner replied "Gadibidi", which means "haste" in Kannada as he had prepared that ice-cream hastily and faster so as to serve the students with ice-cream. It became a hit and popular and soon the public started visiting Diana in Udupi to have the Gadibidi. As years passed, Gadibidi became Gadbud (Hindi word for Gadibidi) and is till now a popular ice-cream variant in coastal Karnataka. This ice-cream variant has traveled the whole country and is popular and available in many parts of India. Today we can find many variants of Gadbud throughout India. Gadbud today contains various flavoured ice-cream scoops, fruits, dry fruits, nuts, jelly, milk creams, chocolate sauce, wafers, etc. and is garnished with a cherry on the top. There is no end to creativity when it comes to preparation of Gadbud as there are lot of options for flavours, fruits, toppings, etc. Gadbud is liked by people of all generations and is loved by everyone. And it is a great experience to have a Gadbud at its birthplace, Diana restaurant Udupi.
