«  Il s'agit de Louis Baltera. Né Luigi Baltera, il a vu le jour à Masserano, dans le Piémont, en Italie, en 1886. Après avoir appris le métier en Europe, il s'installe à New York où il travaille dans plusieurs hôtels, dont le fameux Waldorf Astoria. En octobre 1908, il visite Québec avec une intention bien arrêtée. Il épouse Estelle Mecteau à l'église Notre-Dame-de-la-Victoire de Lévis. Ils s'étaient peut-être rencontrés à New York où ils retournent aussitôt. Le couple revient à Québec en 1910 alors que Baltera devient, à seulement 23 ans, le chef des cuisines du Château Frontenac.
