Português: Mostruário da loja da Fábrica Sto. António. Fábrica de Bolachas A Fábrica de Bolachas Sto. António foi fundada há 123 anos por Francisco Roque Gomes da Silva. A gestão continua nas mãos da mesma família e já vai na quinta geração, tendo passado pelo Dr. Carregal Correia da Silva, e daí a alcunha do Dr. Bolacha, sendo herdada depois por Filipe Sardinha e Isabel Sardinha, fora da ilha, dando a cara e voz no Funchal o jovem gerente Bruno Vieira, de 35 anos, que há 11 anos entrou para a empresa como diretor de produção e há 5 se fez gerente. É o responsável pela inovação, a introdução de gelados caseiros e compotas com frutos locais e as variantes de bolachas sem glúten ou com pepitas de chocolate. E pouco ou nada mudou. Houve adaptações, mas a traça original dentro e fora do edifício manteve-se. A oferta adaptou-se aos novos tempos, mas os produtos estrela continuaram no menu e são um sucesso ao ponto de serem exportados para algumas lojas gourmet no continente mantendo as receitas tradicionais, incluindo uma variada gama de broas. Nas lojas da Madeira, chegam dois dias após serem produzidas por 14 trabalhadores, que diariamente amassam e estendem os doces, confecionam a marmelada e as compotas, e dão braços ao bolo de mel (Lília Bernardes (1956-2016), Diário de Notícias, Lisboa, 28 set. 2014) tendo sido ali empregado o célebre bailarino madeirense Manuel Câmara, fundador de um grupo de danças folclóricas estilizadas inspiradas no Verde Gaio. |
