Description Nopales/Cactus paddles. Juan said that these kinds of cactus paddles are already prepared and don't need to be peeled. You can then boil them in water. He said once the water becomes sticky, they are ready. After cooking, you can rinse and drain in a colander, then cover with a damp towel for about 30 minutes to minimize okra-like sliminess. Here's a recipe for nopales and shrimp salad
