Deutsch: Fermentation von Rotkohl: nach etwa 24 bis 48 Stunden beginnen Blasen im Glas aufzusteigen - ein Zeichen, dass die Fermentation in vollem Gange ist. Die Lake wird dabei aus dem Glas gedrückt, es bildet sich Schaum am Glasrand. Dunkles Sauerkraut in Uchtelfangen, Gemeinde Illingen, Saarland/Deutschland (2023).
