English: Rough grazing, Fovant Down The blue flower in the foreground is chicory.
Chicory is also known as Monk's Beard and Succory and is a member of the Aster family. The flowers of chicory are a sky blue in the mornings but fade from midday. Chicory produces good roots which can be dug, scraped, roasted and then ground as a coffee substitute. The rather bitter flavour can be neutralised by adding honey. In folklore, Chicory flowers are the eyes of a girl crying for her sweetheart's ship, which never returned |
