Summary

edit
Description This is prepared with guanciale. Guanciale is cured pig cheek. Carbonara is frequently made with bacon. I guess it's more authentic to make it with pancetta. Perhaps, though, the most authentica preparation is with guanciale. At any rate, it's excellent.
