Description
English: KERALA COCONUT PANCAKES

(These pancakes made by Tulsi are a favourite all over South India, but they originated in Kerala. They are called “Surul appam” in Malayalam, and “Surul dosai” in Tamil.)

Yield: 8 pancakes

Water 220 millilitres Flour 200 grams Eggs 1 number Salt To taste Sugar 250 grams Coconut 50 grams (Fresh, grated)

Method:

• Beat the water, flour, eggs and salt till the batter is smooth. Adjust the quantity of water as the batter should be runny. • For the filling, mix the grated coconut and sugar in a separate bowl, and keep aside. • Heat a non-stick pan, wait until hot and pour in half a ladle of batter and spread. The pancakes should not be thick. • Cook pancakes for 2 minutes on each side or till done. • Put the cooked pancake on a plate and put the filling in the centre and fold. • Serve hot or cold with honey.
