Italiano: A forma di campana rovesciata, è dotata di un doppio fondo, internamente di rame ed esternamente d'acciaio. Nell'intercapedine tra i due strati affluisce il vapore per riscaldare e coagulare il latte durante la caseificazione, prodotto da un generatore e regolato da una valvola.

Object history
Italiano: Provenienza: caseificio Dall'Olio, Roncocampocanneto (acquisto). I primi impianti sperimentali con il riscaldamento a vapore su caldaie a doppio fondo si diffusero nel reggiano dal 1908. La lavorazione a vapore eliminò dai caseifici la fiamma libera e la cenere e consentì buone economie in fatto di combustibile. Nel 1954 lavorava a vapore l'80% circa dei caseifici. Vent'anni dopo sarebbero divenuti la totalità. La caldaia a vapore, proprio per la sua origine, è anche detta Reggiana
