English: "Photo 19.1 Yalai brewing." Yalai, wife in an arranged marriage, is brewing beer in four aluminum barrels on a wood fire near five large earthenware pots. Beer is brewed by wetting and germinating grain, drying in the sun, grinding, cooking for a long time, boiling and mixing again, cooling and fermenting. Beer can be seasoned using yeast. Cooking longer makes beer sweet. Before the yeast is added, the beer tastes sweet like rivella, a soft drink made from milk.
Français : "Photo 19.1 Brassage de Yalai." Yalai, épouse dans un mariage arrangé, brasse de la bière dans quatre tonneaux d'aluminium sur un feu de bois et cinq grands pots en terre cuite. La bière est brassée en mouillant et en faisant germer le grain, en séchant au soleil, en broyant, en cuisant pendant longtemps, en faisant bouillir et en mélangeant à nouveau, en refroidissant et en fermentant. Assaisonner la bière avec de la levure. Cuire plus longtemps rend la bière sucrée. Avant l'ajout de la levure, la bière a un goût sucré comme la rivella.

Bier wordt gebrouwen door het natmaken en laten ontkiemen van graan, drogen in de zon, malen, lang koken, weer koken en mengen, afkoelen en fermenteren. Met gist bier op smaak brengen. Langer koken maakt bier zoet. Voor de toevoeging van gist smaakt het bier zoet als rivella.
