Mudos testigos de todo ello han sido unas pequeñas construcciones que salpican estos campos: los palomares. Cientos de ellos, desde la época romana, sirvieron de ayuda a la economía familiar. De infinitas formas, se puede decir que no hay dos iguales. Unos son circulares, cual enanas plazas de toros, o cuadrados, como ventas del camino; otros alternan caprichosas formas que recuerdan palacios árabes, chozos africanos o pagodas orientales. Blancos, marrones, rojizos. Por mucho que se parezcan, cada cual tiene algo que le diferencia del otro Muchos palomares están medio derruidos ante la falta de atención, de uso y de dinero para su restauración, a pesar de las subvenciones que se otorgan para mantenerlos en pie. Así, de forma impúdica, nos muestran sus intimidades Dos provechos han tenido los palomares tradicionalmente: por un lado, la cría del pichón, y por otro, la palomina, uno de los mejores abonos conocidos. Hasta estas tierras venían los levantinos que se llevaban por toneladas el excremento para los naranjos. Hoy ya nadie la utiliza. En cuanto al pichón, es el plato típico de la zona. En la actualidad se compran en granjas. De ahí pasan al matadero de Cuenca de Campos para repartirse por toda la región. Un discípulo de Berasategui, Alfonso Fierro, ha decidido quedarse en su tierra y hacer del restaurante de su familia el centro de la cocina de Tierra de Campos. Con sólo 28 años, no es sólo que este chef no se ha ido de su pueblo, de no más de cien habitantes en invierno, sino que ha conseguido atraer a gentes de toda España que acuden para probar sus imaginativas recetas, con pichón. |
