APPLE, horseradish, celery

This was a thin cocoa butter and horseradish shell, filled with granny smith apple juice, soaked in celery juice in a small glass. We were instructed to pour the whole thing in our mouths in one shot and hold our mouths closed as the juice exploded.

Sue Wen: Exploding food is great! The flavors of apple, horseradish, and celery were very clean and refreshing, without any other distracting flavors.

Elisa: Too much horseradish.

Matt: Not enough horseradish? You weren't going to upstage the previous course, so this was a perfect palate-cleanser


BREAD: Elderflower & olive? Kevin found the olive taste quite strong.
