Hiscostume consists of a short hussar jacket carelessly thrownover his shoulders, which is sometimes covered by the longsheepskin coat called the Bunda, wide linen drawers (gatya)neatly pleated in to a band at the waist, and a red waistcoatplentifully ornamented with buttons. His white shirt haswide hanging sleeves. On his head he wears a smart roundfelt hat with a feather. To complete everything, cometop-boots with spurs. As he springs on to his bare-backedhorse, giving the final touch to his fierce moustache, andslashing his whip with a crack which re-echoes across theplains, he can sing with Petőfi— On the Puszta I was born, On the Puszta I dwell! I have no roof to my head ! But I have a horse who can scale hurdles And I am a Csikós of the Alföld plains. Saddleless do I sit my steed. < N■J)D XH H1-1O u Ü oo •/) The Puszta, 9 The Gulyás, though shghtly inferior in rank, is also animportant personage in his way, for can anyone prepare sowell as he the national Hungarian dish Gulyás, which takesits name from him ; and has he not been brought up fromhis childhood, hke his ancestors, to the cattle-trainingprofession ? Yes, indeed. At the age of ten he hadalready become a Bojtár (young herdsman), and thengradually blossomed into a Gulyás. The attire of thesemen is similar to that of the Csikós, with this difference,that whilst the latter have smart hats and top boots withspurs, the Gulyás wear wide-brimmed hats and heavyboots. Instead of a whip they carry huge ornamentedsticks. The Gulyás wears his hair, as a rule, in longgreasy ringlets. The Ko7idás, or swineherd, occupies the least im-portant position amongst the herdsmen, and his dressis consequently inferior even to that of the Gulyás,In the winter they go back to their families, who eitherdwell in
