Milk and Cream Contests. 21 Care must be taken to rinse out the tester after each sample has beenrun through. It is inadvisable to use the sediment tester for cream, for on accountof its heavy viscosity cream may clog the tester enthely. Particlesof fat may also obscure any sediment. Sediment in cream shouldtherefore be judged in the bottle. Before scoring, the bottles shouldbe allowed to stand undisturbed for at least an hour to allow an)^sediment to settle. Then the bottle should be raised carefully, tip-ping only slightly, so that the bottom can be observed. To scoreperfect, not so much as a movable speck must be visible in the bottomof the bottle. When sediment is present, points must be deductedaccording to the quantity. This bottle method may be used in the same manner for testingthe sediment in milk, and the grading shown in figure 5 applies equallyin determining the score. FLAVOR AND ODOR.
