As soon as this is given they all push out tosea together, for the various fishing grounds. The preparation of salting cod was introduced byEnglish merchants in the seventeenth century, andgradually outstripped the ancient product Torfisk. TheKlipfisk is split, salted, and dried on the ground.Torfisk are gutted and hung in pairs by the tail, anddried on wooden scaffolds called hjell, seen continuallyby the sides of the fjords.
